Explosive Muffins

Having Celiac disease means there is nothing on campus that I can eat – and I mean nothing. Considering there are some days when I have classes from 8:30 -5:30, I really need to come prepared. I have been baking for days. I like muffins to act like a vehicle for fruit and vegetables, so I dumped almost three pints of blueberries into these ones. While this seemed like a good (and healthy) idea, there were some strange consequences. The muffins kind of exploded. Now there is a sticky black mess at the bottom of the oven and fewer blueberries actually in the muffins. Oops.
